Silly Goose

Ingredients for 2 drinks

6 oz gin (I use Right)
18 ripe gooseberries, washed
1 tb white sugar
1/3 cup chopped basil plus 2 whole sprigs basil
Club Soda
Ice

Instructions

Put ice in two rocks glasses to chill
Put 12 gooseberries in shaker with sugar and chopped basil, muddle with wooden spoon
Add gin & shake
Strain into glasses.
“Pop” one gooseberry into each glass, discard skin.
Fill remainder of glass with club soda
Add remaining gooseberries and basil sprigs to garnish

This is a very light, sweet summery drink that my mother says “goes down like lemonade.” I recommend a sweet gin that is light on juniper. You can also make it with a white rum or vodka.
